S'mores Cups



Hold on to summer days a little longer and treat your family to these yummy little treats that have all the flavor of s'mores without the hassle of the smoky camp fire. Deborah Quent shared these with us at the Sisters Summer Salad Social. (The recipe is originally from Pampered Chef)

7 Graham crackers, crushed (or enough crackers to equal 1 cup of crumbs)
* Deborah says that Honey Maid graham crackers work much better than generic
5 Tbls of melted butter
1/4 cup powdered sugar

Combine the above ingredients thoroughly and press one mellon-baller sized scoop firmly into each cup of a mini muffin pan. Bake at 350 for 4 to 5 minutes.

Remove from oven and place 2 chocolate pieces (either buy the chocolate pieces made for candy making or you can use sections of Hershey bars, broken up) into each muffin cup. Top with 1/2 of a large marshmallow, cut side down. Bake at 350 for 2 more minutes.

Cool 15 minutes and then remove them from the tray. Enjoy!
*Deborah uses a Pampered Chef orange stick to pop them out of the tray.

Typing this recipe is making my mouth water! If I had any graham crackers I would go make some right now. I'm wondering, if you don't have a mini muffin tray, couldn't you just press the crumb mixture into a 9x13 baking pan, place the chocolate pieces and marshmallows evenly spaced across the crust, and then cut it into bars? I guess you couldn't call it "S'mores Cups"since they would be bars, but I bet it would still taste good:) Somebody try it and let me know how it turns out! Thanks for the recipe Deborah.

  1. I see that on the original recipe (http://www.pamperedchef.com/recipe_search/recipe.jsp?id=91599) it says to dip the top of the marshmallow in melted chocolate, but either way, I'm sure it's terrific!

  2. In my opinion the marshmallows need to be on top so they get all brown and toasty, like a campfire marshmallow. I was also thinking they could be a little bigger. I was wondering about regular muffin cups. THANKS for posting this. I loved those treats!
