Hearty Hamburger Soup

Warm soup and homemade bread are a great meal option for your family as the days get colder:

Hearty Hamburger Soup

2 tablespoons butter

1 1/2 cups diced onion

4 large carrots, sliced

1 1/2 lbs lean ground beef

2 cans Spicy V8 juice

2 cups water

4 teaspoons beef bouillon granules (or 4 cubes)

5 potatoes, peeled and cubed

2 cups frozen cut green beans

1 can corn, drained

1 teaspoon garlic salt

29 oz can petite diced tomatoes

ground black pepper to taste

Melt butter in a pot. Add onions and saute until soft. Add carrots and cook until softened.

Add ground beef and cook until browned. Add tomatoes, V8, water, bouillon, potatoes, green beans, corn, garlic salt and pepper to taste. Bring to a boil, reduce heat and simmer for 1 hour.

Quick Wheat Bread

Mix together:
4 cups wheat flour
2 cups white flour
1 cup sugar
2 teaspoons salt

Whisk together:
3 1/2 cups milk
1/2 cup white vinegar
2 teaspoons baking soda

Add dry ingredients to wet. Mix well. Pour into 2 greased bread pans and bake at 350 degrees for 60 minutes. Slice and serve warm with jam and butter

* I made this and it seriously took 10 minutes to put together, and that includes the amount of time I spent digging my vinegar out of the laundry room and hunting down the baking soda that was in my upstairs bathroom (I don't usually keep them in either of those places - it was an oddly "home remedy" oriented week) Anyway, the bread was yummy and super easy so I highly recommend it to go along side a meal. I tried to find a dairy free option by using soy milk, almond milk, and water but none of them worked. Oh well. It's still a great recipe.

Enjoy!!

General Conference

What a treat to hear from our Prophet and Apostles, not to mention what a beautiful weekend! I loved Elder Packer's talk on Saturday afternoon, and I was very excited to hear the Prophet announce the new temples and the new fund to assist members in attending the temple. If I had to pick one talk that stood out particularly it would have to be Elder Uchtdorf's talk given at the Relief Society General Meeting. He outlined five points for us to consider and remember. If you missed it, click here: http://http://lds.org/general-conference/2011/10/forget-me-not?lang=eng
