Old Fashioned Strawberry Pie
Old-Fashioned Strawberry Pie
1 package (3 ounces) cook-and-serve vanilla pudding mix
1-1/2 cups water
1 teaspoon lemon juice
1 package (.3 ounce) sugar-free strawberry gelatin
1/2 cup boiling water
4 cups sliced fresh strawberries
3 ounces reduced-fat cream cheese
8 oz. container reduced-fat whipped topping, divided
1 teaspoon vanilla extract
8 fresh whole strawberries
1 baked pie crust
Mix the pudding (be sure it is the “cook and serve” variety) and water (not milk!) and lemon juice in a small saucepan. Cook and stir over medium heat until mixture comes to a boil, then cook for 1-2 minutes longer until it is thick. Remove from heat. Add strawberry Jell-O to 1/2 cup boiling water and stir to dissolve. Pour Jell-O into pudding mixture and stir to blend. Refrigerate mixture for 30 minutes. Pour the glaze mixture over the sliced strawberries so that all the berries are coated, stir briefly, then pour strawberries into pie crust (I had more glaze than I felt I needed, so add glaze to equal your desired preference).
For the topping, briefly beat softened cream cheese with mixer. Add vanilla and 1/2 cup of the whipped topping. Beat until it's mixed together. Then fold in remaining whipped topping. Pipe dollops of topping around edge of pie. Add whole berries for the garnish. Refrigerate pie for at least one hour.
